Of course, the rice pudding that you find in any restaurant is usually made with dairy milk. Today you have the opportunity to make this recipe into a healthy vegan version.

Ingredients

Ingredients for 8 servings

  • 250 gr of pudding rice
  • 1 litre of non-dairy milk
  • 6 dates
  • 2 pieces of lemon peel
  • 1/2 vanilla bean
  • Cinnamon

Preparation

Time required:  45 minutes.

  1. Remove stones from dates and soak for 20 minutes

    Add filtered water until it covers them. After 20 minutes blend them together with the water to sweeten the recipe

  2. Put the rice to soak for 10 minutes

    After that time, discard the water and wash well to eliminate toxins

  3. Add rice, non-dairy milk, cinnamon, lemon and vanilla to the induction food robot

    You can add the cinnamon stick or powder, whichever you prefer

  4. Cook for 5 minutes at a high temperature

  5. After that time, cook for 20 minutes at a medium-low temperature

  6. Add the blended dates and cook 5 more minutes

  7. Remove the vanilla, lemon and cinnamon (if it is raw)

  8. Serve in bowls, add extra cinnamon on top and let cool

  9. In addition to cinnamon, you can add toppings to taste, such as berries or cocoa nibs to customise the recipe
