Raw vegan asparagus salad

Ingredients for the salad

  • 10 green asparagus
  • 1 raw beetroot
  • 1 handful of green sprouts
  • 3 tablespoons olive oil
  • 1 lemon
  • Himalayan salt
  • Ground black pepper
  • Sprouted lentils

Ingredients for the sauce

  • 1 cup of cashews soaked (200 grams)
  • 1/4 glass of purified water
  • 3 tablespoons nutritional yeast
  • 1 tablespoon onion powder
  • 1 tablespoon of chopped parsley
  • 1 tablespoon of lemon juice
  • Himalayan salt

Preparation

  1. Put the cashews to soak

    After 4 hours, throw the water away and rinse. They will serve you to make the sauce

  2. Wash the asparagus and peel the beetroots

  3. Chop for a few seconds in a food processor

    Small pieces should be left that can be chewed

  4. Put the asparagus and the chopped beetroots to marinate

    Let it rest in the fridge for at least 2 hours

  5. Prepare the marinade

    Mix oil, lemon, Himalayan salt and pepper

  6. Make the cashew cream

    Put the cashew nuts, nutritional yeast, water, onion, parsley, lemon and salt in your food processor.
    Chop for 30 seconds at high power. Mix well, check salt and chop again for another 20 seconds.

  7. Serve the salad as an accompaniment to a main course with the sauce poured over.

    If desired, it can be served on a green sprout base.
    Decorate with some sprouts on top.

Raw asparagus?

It requires a long preparation time because you have to put the cashews to soak and marinate the asparagus and beetroot. However, the real time of making is little, just about 10 minutes for the salad and another 5 for the sauce.
